My first recipe (Tempeh Quinoa Salad) made from Mark Bittman’s How to Cook Everything Vegetarian.  I love this book.  Or should I say bible?  It has so much information and allows tons of creativity with the recipes.  I highly recommend it to anyone, vegetarian or not!  It never hurts to know how to cook any type of vegetable, grain, or legume you could possibly think of.
