5.27.2011 – Bonus!

Chia seed pudding!  It sounds strange, but it’s easy, delicious, and a fantastic way to get omega-3s.

Chocolate Chia Pudding

Ingredients:

2 tbl chia seeds

1 cup sweetened almond milk

1 tbl cocoa powder

1/4 tsp cinnamon

1/2 tsp vanilla extract

2 finely chopped dates

raspberries for topping

Directions:

Mix all ingredients together and refrigerate for 30 minutes or overnight.  Top with raspberries.  Enjoy!
